The company has recently obtained the grant, from the municipality of Cortona , to build a new really innovative wine cellar . The project is by  Massimo d'Alessandro who  is a professor of industrial design at the architecture faculty  of La Sapienza. It 's very rare that a designer can decide how to project a cellar , even if he is helped, as in this case, by  the specific expertise that only a winemaker can have. The project exploits the use of gravity and it  means to  use gravity instead of pumps to move, at first, the juice  and then the wine. The pumps, even the newest, are  violent tools that during the  displacement of wine create pressures and depressions helping  the air ingress into the pipes.
